  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 cup plain unsweetened kefir
  • 1/2 cup melted unsalted butter
  • 2 large eggs room temperature
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Optional Add-ins

  • 1/2 cup chopped nuts walnuts, pecans, or almonds
  • 1/2 cup chocolate chips or dried fruit
  • 1 tsp ground cinnamon or 1/2 tsp cardamom
  • 1 tbsp citrus zest lemon or orange

Instructions
 

  • **Preheat oven** to 350°F (175°C). Grease a 9x13-inch sheet pan or line with parchment paper.
  • In a **large bowl**, sift together flour, baking powder, baking soda, and salt.
  • In another bowl, **whisk eggs** until blended. Add sugar and whisk until light and frothy.
  • **Add kefir**, then slowly whisk in melted butter and vanilla extract until smooth.
  • Gradually **combine wet and dry ingredients**, mixing just until no streaks remain. Do not overmix.
  • Fold in any **optional add-ins** like nuts, chocolate chips, or fruit.
  • Pour batter into the prepared pan and **spread evenly**.
  • Bake for **28–32 minutes**, or until a toothpick inserted in the center comes out clean.
  • Let the cake **cool in the pan** for 10 minutes, then transfer to a wire rack to cool completely before frosting.

Notes

Gluten-free? Use a GF flour blend with xanthan gum.
Dairy-free? Substitute with coconut or almond kefir and plant-based butter.
No eggs? Use 2 flax eggs (2 tbsp flaxseed meal + 6 tbsp water).
