Ingredients
  

  • 3 medium ripe bananas mashed
  • 2 large eggs
  • 1/2 cup Greek yogurt
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 ½ cups whole wheat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup chopped nuts optional – such as walnuts or pecans

Instructions
 

  • Preheat oven to 350°F (175°C). Grease a loaf pan or line with parchment paper.
  • In a large bowl, mash bananas. Add eggs, yogurt, maple syrup, and vanilla. Mix well.
  • In a separate bowl, whisk together flour, baking soda, and salt.
  • Gradually add dry ingredients to the wet mixture. Stir until just combined.
  • Fold in chopped nuts if using.
  • Pour the batter into the prepared pan and smooth the top.
  • Bake for 50–55 minutes or until a toothpick comes out with moist crumbs.
  • Let cool in the pan for 10 minutes, then transfer to a wire rack. Slice and serve.

Notes

  • Use very ripe bananas for the best flavor and natural sweetness.
