Ingredients
  

  • 2 zucchini sliced into ½-inch rounds
  • 1 red bell pepper thickly sliced
  • 1 yellow bell pepper thickly sliced
  • 1 red onion cut into rings
  • 1 cup cherry tomatoes
  • 1 cup mushrooms halved
  • 2 ears of corn halved
  • 10 asparagus stalks trimmed
  • 2 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper

Chipotle Lime Drizzle

  • 2 chipotle peppers in adobo sauce
  • Juice of 2 limes
  • 1 tbsp honey or maple syrup
  • 2 tbsp olive oil
  • 1 garlic clove
  • Pinch of salt and pepper

Instructions
 

  • - Preheat grill to high heat.
  • - Slice and prep all vegetables as listed.
  • - Toss veggies in olive oil, salt, and pepper.
  • - Skewer vegetables, alternating colors and textures.
  • - Blend all chipotle lime drizzle ingredients until smooth.
  • - Grill veggie skewers for 4–6 minutes per side, flipping once.
  • - Baste skewers with chipotle lime sauce as they cook.
  • - Remove from grill and drizzle remaining sauce over the top.

Notes

You can also roast the veggies in a 450°F oven if grilling isn't an option. Make the chipotle lime drizzle ahead—it stores for up to a week in the fridge.
