Strawberry Cake Layers

  • 1 box strawberry cake mix
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 cup water
  • 1 cup fresh strawberries finely chopped or mashed

Cheesecake Layer

  • 16 oz cream cheese softened
  • 1/2 cup sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • Cream Cheese Frosting
  • 8 oz cream cheese softened
  • 1/4 cup unsalted butter room temperature
  • 1 tsp vanilla extract
  • 2-3 cups powdered sugar to taste

Optional Garnishes

  • Fresh strawberries
  • Whipped cream
  • Chocolate shavings or sprinkles

Instructions
 

Strawberry Cake Layers

  • - Preheat oven to 350°F (175°C). Grease two 9-inch round cake pans.
  • - In a large bowl, combine cake mix, eggs, oil, water, and mashed strawberries. Mix until smooth.
  • - Divide the batter evenly between pans. Bake for 25–30 minutes or until a toothpick comes out clean.
  • - Cool cakes in pans for 10 minutes, then transfer to wire racks to cool completely.

Cheesecake Layer

  • - Beat cream cheese and sugar until smooth.
  • - Add eggs one at a time, then vanilla and sour cream. Mix until combined.
  • - Pour into a lined 9-inch round pan and bake at 350°F (175°C) for 15–20 minutes, until edges are set.
  • - Cool completely and refrigerate until firm.

Assemble & Frost

  • - Layer one strawberry cake layer, the cheesecake, then the second cake layer.
  • - Prepare frosting by beating cream cheese, butter, and vanilla until smooth.
  • - Gradually add powdered sugar until desired sweetness and consistency.
  • - Frost the entire cake and decorate with toppings.
