- Preheat oven to 350°F (175°C). Grease two 9-inch round cake pans.
- In a large bowl, combine cake mix, eggs, oil, water, and mashed strawberries. Mix until smooth.
- Divide the batter evenly between pans. Bake for 25–30 minutes or until a toothpick comes out clean.
- Cool cakes in pans for 10 minutes, then transfer to wire racks to cool completely.
Cheesecake Layer
- Beat cream cheese and sugar until smooth.
- Add eggs one at a time, then vanilla and sour cream. Mix until combined.
- Pour into a lined 9-inch round pan and bake at 350°F (175°C) for 15–20 minutes, until edges are set.
- Cool completely and refrigerate until firm.
Assemble & Frost
- Layer one strawberry cake layer, the cheesecake, then the second cake layer.
- Prepare frosting by beating cream cheese, butter, and vanilla until smooth.
- Gradually add powdered sugar until desired sweetness and consistency.
- Frost the entire cake and decorate with toppings.
