- 1½ cups ditalini pasta
- 1 tablespoon olive oil
- 1 small onion finely chopped
- 2 garlic cloves minced
- 1 can 15 oz cannellini beans, drained and rinsed
- 1 can 15 oz diced tomatoes
- 4 cups chicken broth or vegetable broth
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Optional: grated Parmesan cheese fresh parsley for garnish
Heat olive oil in a large pot over medium heat. Add chopped onion and sauté until translucent (about 3 minutes).
Stir in minced garlic and cook for another 30 seconds until fragrant.
Add diced tomatoes (with juices), cannellini beans, broth, and Italian seasoning. Stir well and bring to a gentle boil.
Add ditalini pasta and simmer uncovered for 10–12 minutes, or until pasta is al dente.
