Ingredients
  

  • cups ditalini pasta
  • 1 tablespoon olive oil
  • 1 small onion finely chopped
  • 2 garlic cloves minced
  • 1 can 15 oz cannellini beans, drained and rinsed
  • 1 can 15 oz diced tomatoes
  • 4 cups chicken broth or vegetable broth
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Optional: grated Parmesan cheese fresh parsley for garnish

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add chopped onion and sauté until translucent (about 3 minutes).
  • Stir in minced garlic and cook for another 30 seconds until fragrant.
  • Add diced tomatoes (with juices), cannellini beans, broth, and Italian seasoning. Stir well and bring to a gentle boil.
  • Add ditalini pasta and simmer uncovered for 10–12 minutes, or until pasta is al dente.
  • Season with salt and pepper to taste.
  • Optional: Add a Parmesan rind while the soup simmers for richer flavor.
  • Serve hot, garnished with fresh parsley and grated Parmesan if desired.

Notes

- For a vegan version, use vegetable broth and skip the cheese.
- Add zucchini or spinach for more veggies.
