Ingredients
  

Main Ingredients:

  • 1 lb ground beef or ground chicken or turkey
  • 1 can black beans drained and rinsed
  • 1 cup corn
  • 1 can diced tomatoes with juice
  • 1 packet taco seasoning
  • 1 teaspoon chili powder
  • ½ teaspoon ground cumin
  • 4 cups chicken broth
  • 1 cup tomato sauce

Optional Toppings:

  • Shredded cheddar cheese
  • Sour cream
  • Crushed tortilla chips
  • Fresh cilantro
  • Lime wedges
  • Avocado slices
  • Diced jalapeños for extra heat

Instructions
 

Brown the Meat

  • In a large soup pot over medium-high heat, add the ground beef (or your preferred meat). Cook until browned, breaking it apart with a spoon. Drain excess grease.

Add Vegetables

  • Stir in the black beans, corn, and diced tomatoes (with juice). Mix well to combine.

Add Seasonings and Liquid

  • Sprinkle in the taco seasoning, chili powder, and cumin. Stir until the meat and veggies are evenly coated. Then, pour in the chicken broth and tomato sauce. Mix again.

Simmer the Soup

  • Bring the mixture to a gentle boil. Reduce heat to low and simmer uncovered for 15–20 minutes, stirring occasionally to help the flavors meld.

Serve and Garnish

  • Ladle the hot soup into bowls. Top with shredded cheddar cheese, sour cream, crushed tortilla chips, and fresh cilantro. Add lime juice, avocado slices, or jalapeños if desired.

Notes

Feel free to customize:
- Add jalapeños for heat.
- Stir in cream cheese for creaminess.
