- 2 tablespoons Olive oil For searing the chicken
- 2 Boneless skinless chicken breasts Cut into halves if thick
- Salt and black pepper To taste
- 3 cloves Garlic Minced
- 1/2 teaspoon Red pepper flakes Optional for heat
- 1/2 cup Sun-dried tomatoes Drained and chopped
- 1 cup Chicken broth Low sodium preferred
- 3/4 cup Heavy cream For richness
- 1/2 cup Parmesan cheese Freshly grated
- 1 teaspoon Italian seasoning Dried blend
- 8 oz Pasta Penne fettuccine, or your favorite type
- Fresh basil For garnish optional
Cook the pasta according to package directions. Drain and set aside.
Season the chicken with salt and pepper on both sides.
In a large skillet, heat olive oil over medium heat. Sear the chicken until golden and cooked through, about 4-5 minutes per side. Remove and slice.
In the same skillet, sauté garlic and red pepper flakes for 1 minute.
Add sun-dried tomatoes and stir for 1 more minute.
Pour in chicken broth and heavy cream. Stir well.
Add Parmesan cheese and Italian seasoning. Let the sauce simmer for 3-4 minutes until slightly thickened.
Return chicken to the pan along with the cooked pasta. Toss everything until well coated.
Garnish with fresh basil, adjust seasoning, and serve immediately!
