Ingredients
  

  • 4 cups rolled oats old-fashioned
  • 1 ½ cups mixed nuts almonds, pecans, walnuts, chopped
  • ½ cup unsweetened coconut flakes optional
  • 2 tbsp chia seeds or flaxseeds optional
  • cup honey or maple syrup
  • 3 tbsp coconut oil or neutral oil melted
  • 2 tsp pure vanilla extract
  • ½ tsp ground cinnamon optional
  • ¼ tsp salt
  • ½ –¾ cup dried fruit cranberries, raisins — add after baking

Instructions
 

  • Preheat oven to 300°F (150°C). Line a rimmed baking sheet with parchment paper.
  • In a large bowl, combine oats, nuts, coconut flakes, seeds, cinnamon, and salt.
  • In a small bowl, whisk honey or maple syrup with melted oil and vanilla.
  • Pour wet mixture over dry ingredients; stir until evenly coated.
  • Spread mixture in an even layer on the baking sheet.
  • Bake 20–25 minutes, stirring halfway through. Watch closely near the end to avoid burning.
  • Let granola cool completely on the pan (it crisps as it cools).
  • Stir in dried fruit if using. Store in an airtight container up to 2 weeks or freeze up to 3 months.

Notes

  • For chunkier clusters: Press granola down with a spatula before cooling.
  • Vegan option: Use maple or agave syrup instead of honey.
  • Nut-free: Replace nuts with seeds like pumpkin or sunflower.
