Ingredients
  

  • 1 lb ground chicken
  • 3 cloves garlic minced
  • 1 tablespoon grated fresh ginger
  • 3 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 2 tablespoons hoisin sauce
  • 1 tablespoon lime juice
  • 1 tablespoon sesame oil
  • 1/2 teaspoon red chili flakes
  • 2 green onions chopped
  • 1/2 cup shredded carrots
  • 8 large lettuce leaves like butter or romaine
  • 1/4 cup crushed peanuts
  • 2 tablespoons chopped cilantro

Optional substitutions:

  • Use ground turkey or tofu instead of chicken
  • Use tamari or coconut aminos instead of soy sauce
  • Replace hoisin with peanut butter and a little honey
  • Swap lettuce with cabbage leaves
  • Use almonds or cashews instead of peanuts
  • Replace cilantro with Thai basil

Instructions
 

  • Prep your ingredients: Mince the garlic, grate the ginger, chop the green onions and cilantro. Rinse and dry the lettuce leaves.
  • Cook aromatics: In a large skillet over medium heat, add sesame oil. Sauté garlic and ginger for 30 seconds until fragrant.
  • Brown the chicken: Add the ground chicken. Break it apart and cook until no longer pink, about 5 minutes.
  • Add sauce and spices: Stir in soy sauce, fish sauce, hoisin sauce, and red chili flakes. Simmer for 2 minutes to let flavors blend.
  • Toss in vegetables: Add shredded carrots and green onions. Cook for 1 more minute. Remove from heat.
  • Assemble wraps: Spoon the warm chicken mixture into lettuce leaves. Top with crushed peanuts and chopped cilantro.
  • Serve: Squeeze fresh lime juice on top and serve immediately.
