- 2 tablespoons chopped fresh herbs dill, parsley, or basil
Prepare the Chicken:
Step 1: Season the chicken breasts with salt and pepper.
Step 2: Heat the non-stick frying pan over medium heat. Add a small drizzle of olive oil and cook the chicken for 5–7 minutes on each side until fully cooked and lightly browned.
Cool & Chop:

Step 4: While the chicken cools, wash and halve the grapes. Dice celery and any additional vegetables you choose to include.
Mix the Dressing:
Step 5: In a large mixing bowl, combine Greek yogurt, lemon juice, a pinch of salt, and black pepper. Stir well until smooth.
Assemble the Salad:
Step 6: Add the diced chicken, halved grapes, celery, and chopped fresh herbs into the bowl with the dressing.
Step 7: Gently toss the ingredients together until evenly coated with the dressing.
Storage:
Store in an airtight container in the fridge for up to 3 days. Stir before serving.
Substitutions:
- Use tofu instead of chicken for a vegetarian option.
- Swap grapes with apples, berries, or pears.
- Replace Greek yogurt with light mayo or dairy-free yogurt.
Meal Prep Tip:
Store dressing separately for longer-lasting freshness.
