Ingredients
  

  • 2 boneless skinless chicken breasts (about 1 lb)
  • 1 cup seedless grapes halved
  • 1/2 cup celery stalks diced
  • 1/2 cup red grapes halved (optional)
  • 1/4 cup Greek yogurt
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 tablespoons chopped fresh herbs dill, parsley, or basil

Instructions
 

Prepare the Chicken:

  • Step 1: Season the chicken breasts with salt and pepper.
  • Step 2: Heat the non-stick frying pan over medium heat. Add a small drizzle of olive oil and cook the chicken for 5–7 minutes on each side until fully cooked and lightly browned.

Cool & Chop:

  • Step 3: Once cooked, allow the chicken to cool for a few minutes before dicing it into bite-sized pieces.
  • Step 4: While the chicken cools, wash and halve the grapes. Dice celery and any additional vegetables you choose to include.

Mix the Dressing:

  • Step 5: In a large mixing bowl, combine Greek yogurt, lemon juice, a pinch of salt, and black pepper. Stir well until smooth.

Assemble the Salad:

  • Step 6: Add the diced chicken, halved grapes, celery, and chopped fresh herbs into the bowl with the dressing.
  • Step 7: Gently toss the ingredients together until evenly coated with the dressing.

Final Touches:

  • Step 8: Taste the salad and add a dash more salt or pepper if needed.
  • Step 9: Serve immediately or refrigerate for 30 minutes to let the flavors meld.
