  • 1 15 oz can white beans (cannellini or Great Northern), drained and rinsed
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • 1/4 tsp red pepper flakes optional
  • Salt and pepper to taste

Fresh Ingredients

  • 1 tbsp olive oil
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 2 cups fresh spinach or kale or 1 cup frozen
  • 1/2 lb pre-cooked sausage chicken, turkey, or plant-based, sliced
  • Optional: 1/2 cup diced carrots or celery
  • Optional: 1 tbsp fresh parsley or chives chopped (for garnish)

Instructions
 

  • Step 1: Heat olive oil in a large stockpot over medium heat.
  • Step 2: Sauté diced onion until translucent, about 3-4 minutes.
  • Step 3: Add garlic and cook for another 30 seconds until fragrant.
  • Step 4: Stir in broth, white beans, sausage, and dried spices. Bring to a boil.
  • Step 5: Reduce heat and add greens. Simmer for 10-12 minutes.
  • Step 6: Taste and adjust seasonings. Add optional toppings like fresh herbs or chili flakes.
  • Step 7: Serve hot with crusty bread or cornbread.

Vegetarian Option: Use plant-based sausage and vegetable broth.
