Ingredients
  

  • 2 lbs beef shank or short ribs cut into chunks
  • 8 cups water
  • 1 large onion quartered
  • 2 medium tomatoes quartered
  • 1 packet tamarind soup base or fresh tamarind if available
  • 1 tbsp fish sauce adjust to taste
  • 1 cup daikon radish sliced
  • 1 cup string beans
  • 1 cup eggplant sliced
  • 2 cups water spinach kangkong or bok choy
  • 2 long green chili peppers optional, for mild heat
  • Salt and pepper to taste

Optional Enhancements

  • 1 tsp ground black pepper
  • 1 tbsp oil for sautéing

Instructions
 

Step 1 – Boil the Beef

  • In a large pot, add beef and water. Bring to a boil, then lower to a simmer.
  • Skim off any scum that rises to the surface.

Step 2 – Add Aromatics

  • Add onions and tomatoes. Let simmer for 45–60 minutes or until beef is tender.

Step 3 – Add Tamarind Base

  • Stir in tamarind soup mix and fish sauce. Taste and adjust to your desired level of sourness and saltiness.

Step 4 – Add Vegetables

  • Add daikon radish and cook for 5 minutes.
  • Add eggplant and long green chili, simmer for 3 more minutes.
  • Add string beans and cook for 2 minutes.
  • Finally, add kangkong or bok choy and cook until just wilted (1–2 minutes).

Step 5 – Final Touch

  • Adjust seasoning with salt, pepper, or more fish sauce.
  • Serve hot with steamed white rice. Enjoy!
